Raw Vegan Snickers Slice

Magical ingredients

 

Base-

1 cup raw peanuts

1/2 cup medjool dates pitted- soaked in 2tbsp hot water

1/2tsp cinnamon

1tsp vanilla extract

2tbsp cacao powder

Pinch of sea salt

 

Method-

Food process peanuts until a fine crumb then add in other ingredients. Process well.

Line a slice tin with baking paper & spread mixture out evenly. Place in freeze to set.

 

Nougat layer-

 

1 cup soaked (overnight) cashews

50g coconut oil

2tbsp coconut nectar or rice malt syrup or agave or maple syrup

1/2tsp vanilla extract

 

Method-

 

Blend cashews until smooth paste, add all other ingredients & blend until smooth & creamy.

Pour over base layer & place back into freezer.

 

Caramel layer-

 

200g medjool dates soaked in hot water for at least 10mins (use the liquid in the mixture to reach desired consistency)

2tbs coconut oil

3tbsp natural peanut butter

3tbsp hulled tahini

3tbs coconut nectar/agave/maple syrup

1/2tsp sea salt

1tbsp vanilla extract

 

Method

 

Blend all ingredients in processor until smooth & creamy caramel. Add some of the date soaked water if needed to reach your desired consistency.

Spread over nougat layer & place back in the freezer.

 

Chocolate Layer

 

100g cacao butter

40g raw cacao powder

40g coconut nectar/maple syrup/rice malt syrup

 

Method

 

Place small bowl in saucepan of water over heat & simmer water.

Melt cacao butter.

Once melted take off heat & add in chosen syrup & cacao powder & mix well.

Pour over caramel layer & place in freezer for a few hours to set.

When set cut into snickers slices & defrost for 5mins before you eat!
