Nutty Boy – Muffins – Better than Bradley’s Salty Balls

‘Nutty Boy’ Muffins

 

Serves 8-10

 

Ingredients

 

1 zucchini, chopped

70g kale, chopped

2 free-range eggs

50g gluten free oats or quinoa flakes

30g Brazil nuts

25g almonds

25g cashews

25g walnuts

1scoop protein powder

20g sunflower seeds

Oil for greasing

 

Method

 

Preheat oven- 180C. Lightly grease muffin tray.

Put all ingredients except seeds into food processor & blitz until just combined. Stir in the sunflower seeds.

Diving mix into muffin cases so 2/3 full. Bake for 20mins, or until a toothpick inserted in the centre comes out almost clean.

Remove from oven, cool in tray for 5mins & transfer to wire rack.
