Raw Vegan Strawberry, Mango & Passionfruit Icecream Cake
The Base:
– 1 1/2 cups raw macadamia nuts
– 1/4 cup raw shredded coconut
– 1/2 cup medjool dates
– 1/4 tsp salt
– lemon rind from half a lemon

The Filling:
– 2 cups raw cashews (soaked overnight)
– 1 vanilla bean scraped
– 1/3 cup coconut oil melted
– 1/3 cup agave nectar or honey
– 1/3 cup almond milk
– 500g mango pulp
– 300g strawberries
– 2 passion fruits

Method:

1. Place all base ingredients into food processor, blitz until combined.
2. Press mixture firmly into lined spring form cake tin. Place in freezer.
3. Place all filling ingredients into food processor (except- mangoes, strawberries and passion fruit). Blitz until smooth and creamy.
4. Roughly pour about 2/3 of the mixture into a separate bowl and put aside. Now add the mango pulp, blitz, then add the passion fruit and gently mix through – don’t blitz. Pour mixture onto the base.
5. Pour mixture that was set aside back into food processor, add strawberries and blitz. Pour strawberry layer over mango layer.
6. Place in freezer until solid.
