Hot! Nicky’s Nibbles-Fully Raw Pad Thai – Yum just ask the raw prawn…..

Pls note you will need a spiralizer for this recipe- if you don’t have one you can cut the zucchini very long & fine & grate the carrot.
This has to be one of my favourite raw vegan meals to make- it’s quick, easy & very tasty & filling.

4-5 cups  spiralised or shredded zucchini
2-3 cups spiralised or shredded carrot
1 cup shredded red cabbage
1 thinly sliced red pepper (capsicum)
1-2 cups sliced mushrooms
1 cup bean sprouts
Half a cup of coriander
1 cup chopped spring onions
Thumb of fresh ginger
Juice of 1 lime
1/4 cup crushed pistachios as a topping
Fresh mint
Optional: jalape├▒o

Dressing Ingredients
Ginger 1-2tsp grated
2 juice of a lime
2 dates (medjool)
2tsp Tamari Soy Sauce
2tbsp plain almond butter
1/2 cup water

1) Blend all dressing ingredients until smooth.
2) prep your veggies by shredding, slicing, dicing & spiralising.
3) place veggies in a bowl & add ginger (grated) coriander & lime.
4) pour dressing mixture over veggies & mix through.
5) serve onto plate & top with crushed pistachios & fresh mint.

As a vegetarian option you can also add feta cheese to this.
