Gluten Free Banana & Coconut Pancakes – Yum Yum

Gluten free banana & coconut pancakes

1 med banana
1-2 ‘happy eggs’ (free range)
1-2 tbsp coconut flour
1tsp vanilla essence
1-2tbsp shredded coconut
1tsp cinnamon
1/2 cup blueberries (fresh or frozen)
Coconut oil for cooking

*please note -obviously use the larger amount of ingredient if you are hungry or sharing*

Blend all ingredients except coconut oil and blueberries together.
Melt coconut oil in pan.
Spoon blobs of mixture into pan so it will make smaller size pancakes (about the size of a crumpet). Flip after 1-2mins.
When cooked place onto plate and stack on top.
Heat through blueberries in pan then pour over pancake stack!
You can serve with a blob of your favourite mundella yoghurt if you wish.
